Most trainers charge upfront for group classes since you're holding a spot. Private sessions can go either way, but many trainers ask for payment right after each session while they're still at the client's home. Packages of multiple sessions usually need at least half down before you start. If you're doing board and train, get a deposit when they book and the rest on pickup day.

Send the invoice the same day you finish the work, even if they already paid you. People lose receipts and will email you months later asking for proof of payment during tax season. If you let invoicing pile up for a week, you'll forget details like which specific behavioral issues you worked on. That documentation matters if the client ever disputes the charge or asks their vet about progress.
